Creamy Chicken and Dumpling Soup Ingredients:
2 chicken breasts
1 large onion
1 cup of carrots
2-3 stalks of celery
1 stick of salted butter
1/2 cup flour (you can use white or whole wheat flour)
4 cups of milk (whole milk is best- it makes the soup extra creamy)
2 cups of chicken stock
1/2 tsp of kosher salt or pink Himalayan salt
freshly cracked black pepper (to taste)
1/2 cup of kale that has been finely chopped
Ingredients for dumplings:
1 cup of flour (you can use white or whole wheat white flour)
2 tsp of baking powder
1 tsp of pure maple syrup
1/2 tsp of kosher salt or pink Himalayan salt
1 Tbsp of cold butter
1/2 cup of milk
1/8 tsp of garlic powder
1/8 tsp of paprika
Creamy Chicken and Dumpling Soup Directions:
Dice the celery, carrots, and onion. Slice the chicken breasts into small pieces and coat them in 1/4 cup of flour. Place butter as well as the celery, carrots, onion, and chicken in a pot over medium-high heat until the veggies have softened and the chicken is cooked through. Gradually stir in the remaining 1/4 cup of flour until it becomes a paste. Add 2 cups of milk slowly and continue stirring to prevent lumps from forming. Next, add the chicken stocks and bring everything to a simmering boil. To make the dumplings, mix together the flour, baking powder, salt, and spices. Create a coarse mixture by cutting in a tablespoon of butter. Next, add the milk and maple syrup until the mixture can be rolled into balls. If the mixture is dry, you may need to add 1 or 2 tablespoons of milk. Create dumpling balls and put them into the boiling soup. Turn the heat down and put a lid on the pot for about 15 minutes. Finally, add the chopped kale and salt and pepper to taste.
