Summer is rapidly passing by! Though it may be hard to believe, August will be here before we know it. We have a few weeks left to enjoy the summer. Why not live it up and enjoy lots of delicious summery foods while we can! Today, we have a simple but delicious recipe for summer Black Bean and Corn Salad with Avocado. This works great with chips and dip, or you could eat it all on its own!

Black Bean and Corn Salad with Avocado Ingredients:

  • 2 cups of fresh or frozen corn
  • 2 cups of grape tomatoes cut in half
  • 1 – 15 ounce can of black beans that have been drained and rinsed thoroughly
  • 2 avocados that have been diced
  • 1 red onion
  • ¼ cup of cilantro

Black Bean and Corn Salad with Avocado Dressing:

  • 2 tablespoons of olive oil
  • 2 tablespoons of lemon juice
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper

Black Bean and Corn Salad with Avocado Directions:

Use a small bowl to combine all the ingredients for the dressing. Whisk them together and sit the bowl to the side. Use a food processor to chop the onion and the cilantro. Alternatively, you could hand chop these ingredients. In a larger bowl, mix the avocado, black beans, corn, tomatoes, onion, and cilantro. Toss the ingredients together to combine them. Then, pour the dressing over the top to combine them and toss again. You can serve this immediately or store it in the refrigerator for 3 to 4 days.

Affordable Recipe for Rosemary Chicken Salad Sandwich

It can get expensive to eat out at restaurants, and your favorite recipes can become boring when you cook them frequently. For a little variety in your meals, give this rosemary chicken salad sandwich recipe a try! It makes a simple and affordable meal that can be used as a lunch or an informal, easy to assemble dinner. To save yourself some time, you can use a defrosted, precooked chicken breast. You could even use a rotisserie chicken from the grocery store. Although this recipe may be more appealing to the adult palate, children may enjoy it as well. It is a healthy recipe that won’t cost a small fortune to put together.

Chicken Salad Sandwich Ingredients:

3 cups (approximately 3/4) of roasted boneless, skinless chicken breast that has been chopped

1/3 cup of green onions that have been chopped

1/4 cup of fat-free yogurt

1/4 cup of chopped smoked almonds

1/4 cup of light mayo

1 teaspoon of Dijon mustard

1 teaspoon of chopped fresh rosemary

1/8 teaspoon of salt

1/8 teaspoon of freshly ground black pepper

10 slices of whole-grain bread (We recommend a hearty, whole grain bread. However, you can use whatever kind you prefer most!)

Chicken Salad Sandwich Directions:

If your chicken is not already cooked, you can boil it on the stove or cook it in a crock-pot. Once the chicken has cooked, allow it to cool. Chop it into bite-sized pieces (or whatever sized pieces your prefer in your chicken salad). Then, combine the chicken, green onions, smoked almonds, yogurt, mayo, fresh rosemary, Dijon mustard, salt, and pepper together in a bowl. Once the ingredients have been mixed together, spread the chicken salad out over the slices of bread. Top each piece of bread with another slice of bread. Cut your chicken salad sandwiches in half. Dig in, and enjoy! This recipe pairs nicely with fresh cut fruit such as watermelon or apple slices.

Check out this easy and affordable holiday recipe for coconut macaroons! They are delicious!

Coconut Macaroons Ingredients:

3 cups of sweetened flaked cocnut

3/4 cup of sugar

4 large egg whites

1/4 teaspoon of salt

1 teaspoon of vanilla extract

1/8 teaspoons of almond extract

Coconut Macaroons Directions:

Preheat your oven to 325 degree Fahrenheit. Place a sheet of parchment paper or foil over your cookie sheets. In a bowl, mix together the coconut, sugar, egg whites, salt, and the vanilla and almond extracts. Once everything has been combined, drop rounded of teaspoons of dough onto your cookie sheets. Bake the cookies until they are a light golden brown color. They should be in the oven for approximately 25 minutes. Allow the cookies to cool on the cookie sheets for approximately one minute after they come out of the oven. Then allow them to cool completely on a wire rack. Enjoy!

Affordable Recipe For Tasty Pecan Sweet Potato Casserole

Thanksgiving is getting closer by the day! Today, I am are bringing you a delicious yet affordable dish, Pecan Sweet Potato Casserole, you can make for your Thanksgiving meal. It is full of rich, yummy flavor. Your family will thank you and it won’t break the bank! Give it a try!!

Pecan Sweet Potato Casserole Ingredients:

For the Sweet Potato Mixture

  • 3 pounds of sweet potatoes (approximately 3 large sweet potatoes), peeled and cut into 2-inch pieces
  • 1/4 cup (or 1/2 of a stick) of unsalted butter, melted
  • 3/4 teaspoon of salt
  • 1/2 cup of packed light brown sugar
  • 2 large eggs lightly beaten
  • 1/8 teaspoon of nutmeg

For the Pecan Topping

  • 1/4 cup (or 1/2 of a stick) of unsalted butter
  • 1 cup of packed light brown sugar
  • 1/3 cup of flour
  • 1 teaspoon of cinnamon
  • 1 cup of coarsely chopped pecans

Pecan Sweet Potato Casserole Directions:

Being by preheating your oven to 350 degrees Fahrenheit.  Next, add water to a large pot of water and bring it to a boil. Add your sweet potato cubes to the water. The sweet potatoes are fully cooked in 20 to 25 minutes when they become soft. While the sweet potatoes cooks, make the pecan topping. In a small pan, melt the butter over low heat. After the butter has melted, turn the pan off and add the brown sugar, flour, and cinnamon. Mix it together, and then stir in the chopped pecans. In a separate bowl, mash the sweet potatoes until they are smooth. Add in the melted butter, salt, brown sugar, eggs, and nutmeg and mix together. Next, pour the sweet potato mixture into a baking dish. Sprinkle the pecan topping over the sweet potato mixture and bake in the oven for approximately 40 minutes (or until the topping is a light golden brown color).

Give this yummy recipe for Creamy Chicken and Dumpling Soup a try! It is filling and delicious!

Creamy Chicken and Dumpling Soup Ingredients:

2 chicken breasts
1 large onion
1 cup of carrots
2-3 stalks of celery
1 stick of salted butter
1/2 cup flour (you can use white or whole wheat flour)
4 cups of milk (whole milk is best- it makes the soup extra creamy)
2 cups of chicken stock
1/2 tsp of kosher salt or pink Himalayan salt
freshly cracked black pepper (to taste)
1/2 cup of kale that has been finely chopped

Ingredients for dumplings:

1 cup of flour (you can use white or whole wheat white flour)
2 tsp of baking powder
1 tsp of pure maple syrup
1/2 tsp of kosher salt or pink Himalayan salt
1 Tbsp of cold butter
1/2 cup of milk
1/8 tsp of garlic powder
1/8 tsp of paprika

Creamy Chicken and Dumpling Soup Directions:

Dice the celery, carrots, and onion. Slice the chicken breasts into small pieces and coat them in 1/4 cup of flour. Place butter as well as the celery, carrots, onion, and chicken in a pot over medium-high heat until the veggies have softened and the chicken is cooked through. Gradually stir in the remaining 1/4 cup of flour until it becomes a paste. Add 2 cups of milk slowly and continue stirring to prevent lumps from forming. Next, add the chicken stocks and bring everything to a simmering boil. To make the dumplings, mix together the flour, baking powder, salt, and spices. Create a coarse mixture by cutting in a tablespoon of butter. Next, add the milk and maple syrup until the mixture can be rolled into balls. If the mixture is dry, you may need to add 1 or 2 tablespoons of milk. Create dumpling balls and put them into the boiling soup. Turn the heat down and put a lid on the pot for about 15 minutes. Finally, add the chopped kale and salt and pepper to taste.
