Pecan Sweet Potato Casserole Ingredients:
For the Sweet Potato Mixture
- 3 pounds of sweet potatoes (approximately 3 large sweet potatoes), peeled and cut into 2-inch pieces
- 1/4 cup (or 1/2 of a stick) of unsalted butter, melted
- 3/4 teaspoon of salt
- 1/2 cup of packed light brown sugar
- 2 large eggs lightly beaten
- 1/8 teaspoon of nutmeg
For the Pecan Topping
- 1/4 cup (or 1/2 of a stick) of unsalted butter
- 1 cup of packed light brown sugar
- 1/3 cup of flour
- 1 teaspoon of cinnamon
- 1 cup of coarsely chopped pecans
Pecan Sweet Potato Casserole Directions:
Being by preheating your oven to 350 degrees Fahrenheit. Next, add water to a large pot of water and bring it to a boil. Add your sweet potato cubes to the water. The sweet potatoes are fully cooked in 20 to 25 minutes when they become soft. While the sweet potatoes cooks, make the pecan topping. In a small pan, melt the butter over low heat. After the butter has melted, turn the pan off and add the brown sugar, flour, and cinnamon. Mix it together, and then stir in the chopped pecans. In a separate bowl, mash the sweet potatoes until they are smooth. Add in the melted butter, salt, brown sugar, eggs, and nutmeg and mix together. Next, pour the sweet potato mixture into a baking dish. Sprinkle the pecan topping over the sweet potato mixture and bake in the oven for approximately 40 minutes (or until the topping is a light golden brown color).
