Pumpkin Snickerdoodle Cookies

With each passing day, it is becoming more apparent that summer is over and autumn is well on its way. You can see it when you look around, and you can feel it too. The warm weather is slowly fading away into cooler, crisper, autumn days. These delicious cookies are perfect for those cool autumn days! Give it a try!

Pumpkin Snickerdoodle Cookies Ingredients:

  • 1 cup of softened unsalted butter
  • 1/2 cup of 100%  canned pumpkin
  • 1 1/2 cups of granulated sugar
  • 2 teaspoons of vanilla extract
  • 1 1/2 teaspoons of baking powder
  • 1 teaspoon of pumpkin pie spice
  • 1/2 teaspoon of salt
  • 1 egg
  • 2 2/3 cups of all-purpose flour

For rolling:

  • 1/2 cup of granulated sugar
  • 1 tablespoon of pumpkin pie spice

Pumpkin Snickerdoodle Cookies Directions:

In a mixing bowl, beat the softened unsalted butter for approximately 30 seconds or until it becomes smooth. Next, add the canned pumpkin, sugar, vanilla extract, baking powder, pumpkin pie spice, and salt. Mix these ingredients together until they are well combined (this takes approximately 2 minutes). Then, add the egg and stir to combine. Add the flour and combine until everything is thoroughly mixed. Then, refrigerate the mixture for approximately 2 hours or until it becomes dense enough that you can scoop it. When you remove the cookie mix from the fridge, preheat your oven to 350 degrees Fahrenheit. In a shallow bowl or tray, combine the granulated sugar and pumpkin pie spice. Cover your baking sheets with parchment paper or another non-stick cooking mat. Then, use a medium sized cookie scoop to scoop out the dough. Roll the balls of dough in the sugar/pumpkin pie spice mixture. Then, place the cookies on the tray and bake for approximately 10 minutes. Then, enjoy!

Autumn is almost here, and now is a great time to check out some delicious and simple fall recipes. Try this great Chicken Pesto Pasta recipe! It is full of rich, yummy flavors that will have everyone in your family asking for seconds.

Chicken Pesto Pasta Recipe Ingredients:

For the pesto:

  • 2 cups of fresh basil
  • 1/2 cup of walnuts
  • 4 cloves of garlic that have been peeled
  • 1/2 teaspoon of kosher salt
  • 1/4 teaspoon of black pepper
  • 1/2 cup of parmesan cheese
  • 1/2 cup of olive oil

For the pasta:

  • 1/2 pound of your favorite type of pasta, cooked
  • 1 pound of boneless/skinless chicken breasts
  • 3 roma tomatoes that have been diced and sliced
  • 1/4 cup of parmesan cheese
  • 1/4 cup of chopped walnuts

Chicken Pesto Pasta Recipe Directions:

Create your pesto by placing the basil, walnuts, garlic, salt, and pepper into your food processor or heavy duty blender. Blend them together and then add in the olive oil and parmesan cheese until the mixture reaches your desired consistency. Use a mallet or a hard object to flatten out your chicken breasts to approximately 1/4″ thick and grill for several minutes on each side until they are fully cooked. Alternatively, you could cook them on your stove top. Next, make your pasta according to the directions on the packaging. When the pasta is finished and you are ready to serve your meal, combine the hot pasta with the pesto, tomatoes, parmesan cheese, chopped walnuts, and cooked chicken. Then, dig in!

DIY Cooking On A Budget: Pull-Apart Autumn Pumpkin Loaf!

Although it may be hard to believe, autumn will soon be here! It always bring with it cooler weather, corn maizes, falling leafs, fresh crisp apples, and pumpkin EVERYTHING. If you enjoy pumpkin flavored foods, you will likely love this delicious recipe for Autumn Pull-Apart Pumpkin Loaf. This recipe is fantastic and so simple to make. You can get your children involved in preparing this recipe because it is very easy to do.

Autumn Pumpkin Loaf Ingredients:

  • 3/4 cup of canned pumpkin puree
  • 1/2 cup of granulated sugar
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of pumpkin pie spice
  • 1 large egg
  • 1 can (8 count) of Pillsbury Grands Biscuits (be sure to choose buttermilk or home-style biscuits; flaky will NOT work!)
  • 1 teaspoon of cinnamon

Ingredients for the glaze:

  • 1/2 cup of powdered sugar
  • 1 teaspoon of cinnamon
  • 3 tablespoons of heavy whipping cream or milk

Autumn Pumpkin Loaf Directions:

Begin by preheating your oven to 350 degrees Fahrenheit. Use nonstick cooking spray that contains flour to grease your 8×4 or 9×5 loaf pan. Next, mix together the pumpkin puree, 1/4 cup of granulated sugar, vanilla extract, pumpkin pie spice, and egg. Then, slice each biscuit in half horizontally. In another bowl, mix together the remaining 1/4 cup of sugar and 1 teaspoon of cinnamon. After that, cover each side of the biscuit dough in the sugar/cinnamon mix. Following the aforementioned step, cover each piece of biscuit in the pumpkin mixture and stack each biscuit on top of the next. Once you’ve covered and stacked each biscuit, place them in your loaf pan carefully. Bake until the biscuits are a light golden brown color. Make the glaze by combining the ingredients in a bowl, whisking, and then drizzling over the pumpkin loaf. Enjoy!

Here’s Another Delicious Summer Recipe Orzo Caprese Salad

The first official day of summer will soon be here. Why not soak up every bit of summer by immersing yourself in it- by enjoying the weather, cooking summer meals with summer crops, relaxing whenever possible, and thoroughly enjoying yourself! Today, we have a simple and tasty recipe for Orzo Caprese Salad. It can be assembled quickly and you and your family will certainly enjoy it!

Orzo Caprese Salad Ingredients:

  • 1 cup (or 7-ounces) of dry orzo
  • 8 ounces of fresh (water-packed) mozzarella ‘pearls’
  • 1 pint of grape tomatoes (cut them into halves)
  • 1 (1/2-ounce) bunch of fresh basil (slice it into fine pieces)

Orzo Caprese Salad Ingredients For the Dressing:

  • 1/2 cup of extra-virgin olive oil
  • 1/4 cup of balsamic vinegar
  • 2 teaspoons of Dijon mustard
  • 2 teaspoons of honey
  • 1 minced clove of garlic
  • 1/2 teaspoon of salt
  • Freshly ground black pepper

Orzo Caprese Salad Directions:

Follow the directions on the pasta box to cook your orzo. Once it has finished cooking, allow to cool but toss is periodically so it does not stick together. In a bow, mix together the olive oil, balsamic vinegar, Dijon mustard, honey, minced garlic, salt, and pepper to taste. Blend these ingredients together by whisking vigorously or using blender. In a large bowl, mix the orzo with the mozzarella pearls, tomatoes, basil, and approximately 2/3 of the prepared dressing. Add salt and pepper based on your taste preferences. Then, serve this delicious salad right away. If you want to serve the salad completely cooled, refrigerate it and then the remaining dressing right before you serve it. Enjoy!
